Zucchini Bread Recipe


Well, we have certainly been enjoying this zucchini bread and have already eaten one whole loaf. :) Here's the recipe:

Whole Wheat Zucchini Carrot Bread

3 cups zucchini -- shredded - I used a combo of zucchini and yellow squash and it worked well
1/2 cup carrot -- shredded
3 cups whole wheat flour
½ c oats
3 T flax meal
1/2 tablespoon baking soda
1/2 tablespoon baking powder
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon allspice
1/2 teaspoon lemon peel
1/2 teaspoon salt
4 large eggs
1 cup applesauce
3/4 cup raw honey
¼ c melted butter
¼ c melted coconut oil
2 1/2 teaspoons vanilla extract

Preheat the oven to 350 degrees. Grease two bread pans and set aside.

Combine the flour, oats, flax meal, baking soda, baking powder and spices. Mix thoroughly. Set aside.

In a glass measuring cup combine butter and coconut oil. Place in a pan of water on the stove and heat until melted. Add honey and stir until thinned. In a separate bowl, beat eggs well and mix with applesauce, zucchini, carrot, and vanilla. Slowly combine with honey/butter/oil mixture. Pour wet ingredients into dry ingredients and mix just until fully incorporated.

Pour into prepared pans.Bake at 350 for 45 minutes to 1 hour or until a toothpick inserted in the center comes out clean. Place on a rack to cool for 10 minutes, then remove from the pans and cool completely.

Store in the refrigerator.
Yield: 2 loaves (20 servings)

Yum1 Love zucchini bread. I try to grow them every year just so I can make a few loaves. Love all the spices in there- like Chai, huh?:)
